Happy St. Patrick’s Day to you! Even though it’s a bit crazy out there out with the 2020 virus, don’t let that damper your taste buds, still got to have that corned beef and cabbage meal, if only once a year. We host a family/friends dinner annually for this tasty meal, about 10 of us gather for a dinner of all Irish dishes and it’s not complete until a warm loaf of Irish soda bread is on the table and this year, I added some of the popular “everything bagel” seasoning to the mix and on top and it gives this simple bread a nice upgrade.
This recipe is easy and best of all, not much kneading. I bake mine in a cast iron skillet but any pan will do. You can also add raisins like the original recipes call for or you can leave them out like do. Either way, this is a must for tonight’s Irish meal but keep it handy, it’s quick to make so you’ll want to make it more often. Enjoy!
Everything Irish Soda Bread
3 1/3 c. all purpose flour
2 Tbsp. Everything bagel seasoning
1 t. baking soda
1 1/2 c. buttermilk
1/2 t. salt
Preheat oven to 425. Mix flour, everything seasoning, baking soda, salt and buttermilk in a large bowl, until lumps forms and dough comes together. Dump on floured surface and knead just until it forms a soft ball. Place on a baking sheet or cast iron skillet. Cut a X on top and sprinkle with more everything bagel seasoning on top. Bake for 20 mins, more if not done. Allow to warm a bit before cutting, serve with Irish butter for best flavor.
